Fletcher

Our new little guy has been in his new home for about 2 weeks now and I think he's here to stay. Not that there was any question about that but you know what I mean.....

Merry Christmas Y'all

I have to say that I have enjoyed this holiday season so much more than in previous years. This is why I think so....I read a poll on USA Today....no, I don't get the newspaper, I have the app. This was the question: Is holiday gift giving less important in your family than in years past? Here were the choices: (which would you choose?)

A. Yes, and I'm so glad
B. Yes, and I wish it wasn't
C. No and I'm so glad
D. No but I wish it was

I happily answered A. Here's why. Scrambling to buy gifts for family members who have plenty and don't need anything else just isn't fun for me. Our Christmas this year has been less about material gifts and more about the gift of family, friends, and faith. Now, buying for the kids is different. That IS fun, especially watching their little faces when they open up the gift, I enjoy that! The other reason I enjoy Christmas so much more this year is this; I look forward to spending time with my family, I can celebrate the real reason we have Christmas and know that each year is better than the next. Our family is a work in progress. In the beginning, we were a MESS, now though, I can proudly say that we work on things, we're not perfect and we never will be. We work through our issues, we try harder for each other, and we know that we will mess up, but we forgive, just as He forgives us daily.

This Christmas I wish that you would enjoy every second of spending time with your loved ones, even though sometimes they might drive you nuts. I wish that you would count all of the blessings in your life, and I wish you the privilege of knowing Him and serving Him.

maw maw and JessThis year Josh attempted to make a turkey in a brown bag, compliments of The Famous Kidd Kraddick Brown Bag Turkey Recipe. It was fabulous!!! He even got up at 6:30 to put it in the oven. What? Up before his wife? Yep. It was slightly nerve racking thinking about having 15-20 guests at the house for Thanksgiving dinner and not knowing how this turkey looked until it was finished!

Best. Salad. Ever.

Tonight I ate the most yummy salad I have ever put into my mouth. I wanted it to be a never ending plate that I could eat forever. But all good things must come to an end, and sadly, my plate was empty very soon. I liked it so much I even ate the red onions. And I hate onions.....until today! Here's how to make it:

Perfect served with crusty bread. For a change, try warming the dressing in the same skillet you used to fry the bacon, then toss with the salad to gently wilt the spinach. Ingredients with an asterisk (*) are available in the Whole Foods Market Family of Brands.

3/4 pound boneless, skinless chicken breasts
1 tablespoon extra virgin olive oil
*1 teaspoon Mediterranean seafood seasoning
* 4 slices cooked bacon, chopped
* 2 cups sliced button mushrooms
4 cups baby spinach 1/2 cup blue cheese crumbles
* 1 cup cherry tomatoes, halved
1 cup canned corn, drained*
1 small red onion, thinly sliced
Dressing of your choice


Preheat broiler. Place oven rack about 7 inches from heat source. Brush chicken breasts with oil and sprinkle with seasoning. Broil on a baking sheet for about 15 minutes, turning once, until nicely browned and cooked through. Remove from oven and set aside. In a large salad bowl, toss together bacon, mushrooms, spinach, blue cheese, tomatoes, corn and onions. Arrange salad on plates, then cut warm chicken into bite-size strips and place on top. Serve with your favorite dressing.

Look! I found an egg free cake and frosting recipe so Carter could eat with us. And it was yummy! Can you believe this is the first time I've made a cake for my kids birthday? Normally I just buy them, but this was much more fun, and Ryleigh helped make it!

Attack of the Geese


Carter LOVES to feed the ducks and geese and on any given day at Red Kane park in Arlington, Texas, these geese are ready to attack you if you wake them or do not have enough food for them. They are seriously the most aggressive beasts I have encountered at a park and unfortunatly, Carter man has no fear of them.

This one actually pecked at his "privates".

I had to literally snatch C Man up before these meanies were about to attack him!

Hi! I'm on the potty, reading my favorite potty book, "The Potty Train!"

Yes, we are potty training at the Smith house! We've been at it for about a month now and we do okay, or rather, pretty darn good for 17 months! Carter is going on the potty at least once a day and has done a number 2 a couple of times too. He is so proud of himself and of course loves to flush the potty and when's he's done he compliments me! yes me, "Good girl, mama" he says.
